The "Mocavero Salumi" company produces traditional cured meats in the heart of the Valle della Cupa in Monteroni di Lecce, part of the Negroamaro park. Products . "Mocavero Salumi" smell of history and tradition, born from an exclusively and strictly artisanal production process after a careful selection of raw materials. One of the leading products is Capocollo Ubriaco (selected by the Bocconi University of Milan as an innovative product). Its added value is the absence of antioxidants and chemical preservatives leaving room only for the natural ones; in this product, an agricultural waste "Marc of Negroamaro" was used, completing the entire production cycle, thus making it an innovative and sustainable product, leaving the artisanal production process unchanged.
