Requires a special blend of semolina: durum wheat semolina grown in the sunny and windy hills of the south.

Spaghettoni - Pastificio Benedetto Cavalieri is obtained with a die, built in a special bronze alloy, with funnel-shaped holes to give delicate pressure when the dough takes its shape .
Drying at a low temperature for about 40 hours, allows for perfect osmosis between carbohydrates and proteins: thus obtaining balanced cooking from the core to the surface, a "delicious chewiness" and a perfect blend with your condiments.
