Pecorino cheese - Masseria Cinque Santi is a Salento cheese made from sheep's milk, whole, raw, with raw paste, with a consistency from semi-hard to hard depending on the degree of maturation which can be short-medium or long.
Always depending on the degree of maturation, the cylindrical shape of this cheese can have different characteristics.

After dry salting, the wheels of Pecorino Cheese - Masseria Cinque Santi are placed on wooden boards, turned over every day and cleaned of mould, washing them with warm water until the rind thickens. changes from pure white to straw yellow. During the maturing period, the Pecorino cheese is massaged with EVO oil until it acquires a compact rind of an intense yellow colour.

FRESH CHEESE
The fresh cheese (at least 60 days of maturation) has flat faces with a diameter of 12÷14 cm, convex sides of 10÷12 cm, weight about 2.0 kg and a thin, fairly soft straw-yellow rind with a basically sweet flavour.

MATURED CHEESE
Matured cheese (8÷10 months of maturing) has flat sides with a diameter of 12÷14 cm, convex sides of 5÷6 cm and weighing about 1.5 kg and a thick and hard crust, hazelnut color, a more pronounced smell and a strong and spicy taste.


Use: It is a "table" cheese that is used as a component of platters, or, especially grated, it is an important ingredient for seasoning both raw and cooked vegetables, traditional pasta and focaccia recipes.

Pairing: at the end of lunch accompanied by orange marmalade, acacia honey or Gelotta with orange - Masseria Cinque Santi.
For the product with a shorter maturation, it is recommended to combine it with rosé or dry red wines, young and with little body.
For the more mature product, on the other hand, we recommend mature, warm red wines, full-bodied, moderately tannic.

Conservation: In a cool, dry place, wrapped in a cotton cloth.
