Elfo Chardonnay White - I.G.P. Salento | Apollonio Vini  

TERRITORY

Salento is identified by three climatic elements: the sun, creator of generous sugar levels, the sea, responsible for the minerality of the wines, and the wind which makes this area naturally free from disease and particularly suitable for the production of "natural" wines ”. Characterized by extensive flat areas and modest hills, Salento is geologically made up of a medium-textured limestone structure.

GREAT VARIETIES
Thanks to its excellent adaptability, Chardonnay is one of the most widespread white grape varieties in the world. Cultivated in all climatic conditions and in any territory, on clayey-calcareous soils and with a temperate, warm and windy climate, it ensures great results.

VINIFICATION
Soft pressing to preserve the fruity and floral taste. This is followed by about two weeks of slow fermentation at a controlled temperature in steel tanks in which the refinement is completed. After two months of rest in steel, it is bottled.

Alcohol content: 12%

Features: Straw yellow color with greenish reflections, with intense hints of yellow fruit with light citrus notes and herbaceous nuances. A fresh, mineral flavor with good acidity, balanced and complex with a dry and persistent taste.

Pairings: Fish-based aperitifs and appetizers, raw seafood, tuna tartare and buffalo mozzarella.

Service temperature: 10-12°C.
