The Salento wine Mille e thirty millesimato of Cantine Due Palme is produced with the classic method - considered the most important sparkling wine system in the world.

GRAPES: Negroamaro vinified in white

METHOD: Classic - considered the most important sparkling wine system in the world, it involves a slow refermentation in the bottle, followed by a long maturation of the sparkling wine in contact with the lees . All the main phases of the classic sparkling method are carried out: the "tirage", i.e. the phase in which the base wine is first mixed with yeast and sugar syrup and then the product is bottled in bottles sealed with crown caps. Subsequently, the bottles are arranged horizontally in stacks, in a thermo-conditioned environment at 15°C. Then begins the so-called "prise de mousse" phase, i.e. the transformation of the wine into sparkling wine, followed by maturation on the lees ("maturation sur lies"). After a maturation of 48 months, we move on to the "remuage", a moment in which the bottles are subjected to rotations to ensure that the lees can detach from the walls and head into the bidule or onto the cap. Then we move on to disgorgement ("degorgement"). This is followed by refinement in the bottle before being placed on the market.
